Ingredients
Watermelon Quinoa Salad
2cupsarugula
2cupsspinach
1/4small watermeloncubed
1cupquinoacooked
1cucumbercubed
1/4cupwalnuts or almondstoasted (optional)
1/4cupfeta cheesecrumbled
Soy sauce vinaigrette dressing
2tbspolive oil
1tbspbalsamic vinegar
1tbspsoy sauce
1tbspfresh lemon juice
1tspagave nectar or honey
Instructions
Mix the salad ingredients together in a large bowl.
Combine the Soy sauce vinaigrette dressing ingredients in a small bowl or glass jar. Shake or stir well.
