Banana Chocolate Chip Bread Recipe

I love to tweak recipes into the healthy zone as much as I can while maintaining that sinful goodness.  I love this recipe for banana chocolate chip bread and it all starts with ripe bananas.

There are two ingredients on the list that most of you probably don’t have in your pantry. The first one is coconut oil – the kind you use for cooking:

I found this one at Trader Joe’s (a happy discovery), and it’s organic AND fair trade! Bonus points.  If you’re thinking that coconut oil is bad for you, think again. It’s very good for your body and you can read more about it here and here. It does add a slight coconut taste to your cooking, but my daughter who hates coconut, didn’t even notice. The recipe calls for 1/4 cup coconut oil and 1/4 cup canola oil.  You could use all coconut oil or all canola oil if you choose (full recipe at bottom of post).

The next “uncommon” ingredient is coconut palm sugar by Sweet Tree:

This sugar has a low glycemic index value and contains natural trace nutrients not found in white sugar. I love it for baking and I put it on top of my oatmeal too. It has a more mellow sweetness to it.  I buy mine at Whole Foods and I’m sure that most health food stores carry it.

After mashing up my bananas, I add the “wet” ingredients which include eggs, coconut oil, canola oil, vanilla, and sugar. The full recipe is at the bottom of this post.

Next, you’ll add the dry ingredients:

And we saved the best for last, the chocolate chips:

Bake for about 50 minutes and you have deliciousness:

Banana Chocolate Chip Bread

Ingredients:

1 cup white whole wheat flour              ½ cup white flour

1 ¼ tsp. baking powder                         ½ tsp. baking soda

¼ tsp. salt                                                1 tsp. vanilla

1 whole egg & 1 egg white                      1 cup mashed bananas (approx 2 bananas)

¾ cup evaporated palm sugar (blonde) by Sweet Tree OR white sugar

¼ cup canola oil                                        ¼ cup coconut oil OR canola oil

½ cup chocolate chips                              ½ cup chopped walnuts (optional)

 

Directions:

In large mixing bowl, stir together eggs, banana, sugar, oils and vanilla. Stir in flour, baking soda, baking powder and salt just until moistened. Add chocolate chips and nuts.

Spread batter into greased 8 x 4 x 2-inch loaf pan.  Bake in a 350 degree oven for 45 – 50 min.
